Jessica Chastain

Jessica Chastain (born March 29, 1981) is an American film and television actress

But what changes come upon the weary desert of our culture, so darkly described, when it is touched by the magic of Dionysus! A storm seizes everything decrepit, rotten, broken, stunted; shrouds it in a whirling red cloud of dust and carries it into the air like a vulture. In vain confusion we seek for all that has vanished; for what we see has risen as if from beneath he earth into the gold light, so full and green, so luxuriantly alive, immeasurable and filled with yearning. Tragedy sits in sublime rapture amidst this abundance of life, suffering and delight, listening to a far-off, melancholy song which tells of the Mothers of Being, whose names are Delusion, Will, Woe
Yes, my friends, join me in my faith in this Dionysiac life and the rebirth of tragedy. The age of Socratic man is past: crown yourselves with ivy, grasp the thyrsus and do not be amazed if tigers and panthers lie down fawning at your feet. Now dare to be tragic men, for you will be redeemed. You shall join the Dionysiac procession from India to Greece! Gird yourselves for a hard battle, but have faith in the miracles of your god!

Pasta Meat Sauce a la Stefano!

1/2 cup chopped onion
2 tablespoons extra-virgin olive oil
2 tablespoons butter
3/4 pound ground beef
Salt
1/2 cup white wine
2 cups chopped canned peeled tomatoes
1/3 cup grated parmigiano-reggiano cheese

Chop all ingredients into even, bite-size pieces or smaller.

For egg pasta dishes, reduce the sauce less, as egg pastas will absorb some of the liquid.

Directions:
1.
In a large saucepan, combine 1/2 cup chopped onion and 2 tablespoons each extra-virgin olive oil and butter over high heat. Cook until golden, then stir in 3/4 pound ground beef and cook for 5 minutes; season with salt. Add 1/2 cup white wine and cook for 2 minutes. Stir in 2 cups chopped canned peeled tomatoes with their juice, season with salt, bring to a simmer and cook for 1 1/2 hours. Add 1/3 cup grated parmigiano-reggiano cheese when tossing with pasta. Makes 2 1/2 cups.

For a sweeter, mellower sauce, cook chopped onions until softened in a combination of extra-virgin olive oil and butter for your base.

For a more pungent sauce, cook finely chopped garlic in extra-virgin olive oil until just golden.

Halibut in Foil Packets With North African Flavors

Halibut in Foil Packets With North African Flavors
Time: 30 minutes

2 preserved lemons
2/3 cup mixed olives, pitted
2 garlic cloves, sliced
1 teaspoon cumin seeds, lightly crushed
1 teaspoon coriander seeds, lightly crushed
4 halibut steaks, 1 1/4-inch thick, about 2 pounds
Salt and pepper
4 tablespoons extra-virgin olive oil
Chopped coriander, optional.

1. Build a campfire and let it burn down until the embers glow; you don’t want flames to cook the fish. Otherwise, heat an oven to 400 degrees.

2. Quarter the preserved lemons. Slice away and discard the flesh and pith. Cut the remaining zest into strips and combine with the olives, sliced garlic, and cumin and coriander seeds.

3. Place each halibut steak in the center of a large double layer of aluminum foil. Fold up the edges slightly, then lightly season the fish with salt and pepper. Top with 1/4 of the olive mixture and 1 tablespoon olive oil. Bring the edges of the foil together and pinch them firmly to create an airtight seal. The packets can be made a few hours ahead and refrigerated.

4. Place the packets in the medium-hot embers of the fire, or if the fire is too fierce, on a rack above it. Leave to cook for 10 minutes or so, depending on the heat of the fire. The fish should feel just firm if prodded through the foil with a wooden spoon handle. Otherwise, cook in the oven for 15 minutes. Unwrap the packets carefully and scatter with chopped coriander, if you like.

Yield: 4 servings.

Last Year at Marienbad

"Last Year at Marienbad" (1961), directed by Alain Resnais, operates within a surrealist, puzzling narrative. Many critics have hailed it as a masterpiece, while audiences over the years have found it undecipherable and pretentious.

Engineering Challenge : Paper Boat Mentalrobics Article

Braingle: 'Engineering Challenge : Paper Boat' Mentalrobics Article: Engineering challenges are fun activities that are frequently assigned to students in physics or engineering classes, but they can easily be used outside of these venues. An engineering challenge usually has a simple goal and some rules about what sorts of materials you are allowed to use. These are great ways to get people thinking creatively and to foster teamwork and competition. Try an engineering challenge at a birthday party, office outing, scout meeting, or any other gathering where you want to have fun and exercise your creativity.

In the Paper Boat challenge, participants are asked to make a boat out of paper and a small amount of tape, glue or staples. Everyone should be using the same amount of materials. Each boat will be required to hold a small cargo (marbles, pencils, or little toy figurines work nicely). The boat that remains floating the longest is the winner. A variation of this challenge is to allow teams to use as much or as little paper as they want, but have a heavier cargo (a baseball or book). The lightest boat that can float the cargo for 1 minute is the winner.

In Memoriam A.H.H. - Tennyson

I hold it true, whate'er befall;
I feel it when I sorrow most;
'Tis better to have loved and lost Than never to have loved at all.

This stanza is to be found in Canto 27. The last two lines are usually taken as offering a meditation on the dissolution of a romantic relationship. However the lines originally referred to the death of the poet's beloved friend.

Another much-quoted phrase from the poem is "nature, red in tooth and claw," found in Canto 56, referring to humanity:

Who trusted God was love indeed
And love Creation's final law Tho' Nature, red in tooth and claw With ravine, shriek'd against his creed

Also, the following are found in Canto 54

So runs my dream, but what am I?
An infant crying in the night
An infant crying for the light
And with no language but a cry.

Wittgenstein's Beetle and Other Classic Thought Experiments (9781405121927): Martin Cohen: Books

Amazon.com: Wittgenstein's Beetle and Other Classic Thought Experiments (9781405121927): Martin Cohen: Books: Wittgenstein's Beetle and Other Classic Thought Experiments [Paperback]
Martin Cohen

In his Philosophical Investigations, Wittgenstein uses an analogy in an attempt to clarify some of the problems involved in thinking of the mind as something over and above behaviour. Imagine, he says, that everyone has a small box in which they keep a beetle. However, no one is allowed to look in anyone else’s box, only in their own. Over time, people talk about what is in their boxes and the word “beetle” comes to stand for what is in everyone’s box.

Through this curious analogy, Wittgenstein is trying to point out that the beetle is very much like like an individual’s mind. No one can know exactly what it is like to be another person or experience things from another’s perspective (look in someone else’s box), but it is generally assumed that the mental workings of other people’s mind are very similar to our own (everyone has a beetle which is more or less similar to everyone else’s). However, it does not really matter – he argues – what is in the box, or whether everyone has a beetle, since there is no way of checking or comparing. In a sense, the word “beetle” – if it is to have any sense or meaning – simply means “what is in the box”. From this point of view, the mind is simply “what is in the box” – or rather “what is in your head”.

Wittgenstein aruges that although we cannot know what it is like to be someone else, to say there must be special mental entity called a mind that makes our experiences private is wrong. Part of the reason he thinks this way is because he considers language to have meaning through public usage. In other words, when we talk of having a mind (or a beetle), we are using a term that we have learnt through conversation and public discourse. Furthermore, the word we have learnt can only ever mean “whatever is in your box” – i.e. your mind – and should not therefore be used to refer to some entity or special mental substance since no one can know that such a thing exists (we cannot see into other people’s boxes).

Broccoli, Beef & Potato Hotdish

Broccoli, Beef & Potato Hotdish
Makes: 8 servings
Active time: 45 minutes | Total: 1 hour 40 minutes | To make ahead: Prepare through Step 6; cover and refrigerate for up to 1 day or freeze for up to 1 month (defrost in the refrigerator for 2 days before baking). Let stand at room temperature for 30 minutes before baking (Step 7).
Cost per serving: under $2.50

This easy casserole, full of ground beef, roasted broccoli and topped with hash browns, was inspired by the classic Minnesota Tater Tot hotdish. Roasting the broccoli before adding it to the casserole gives the whole dish a much more complex and exciting flavor, but it’s by no means necessary. If you want to keep it simple, skip roasting the broccoli (Step 2) and use 6 cups frozen broccoli, thawed, in its place (omit 1 tablespoon oil, as well).

1 1/2 pounds broccoli, cut into 1-inch florets (about 6 cups)
2 tablespoons canola oil, divided
1 1/2 pounds 95%-lean ground beef
1 large onion, chopped
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 1/4 teaspoons salt, divided
4 cups low-fat milk
1/3 cup cornstarch
2 cups shredded sharp Cheddar cheese, preferably orange
1/4 teaspoon ground turmeric
4 cups frozen hash-brown or precooked shredded potatoes (see Note)
1 large egg, lightly beaten
1/2 teaspoon freshly ground pepper
Canola or olive oil cooking spray
1/4 teaspoon Hungarian paprika, preferably hot

1. Preheat oven to 450°F.
2. Toss broccoli with 1 tablespoon oil in a large bowl. Spread out on a baking sheet and roast, stirring once halfway though, until just soft and browned in spots, about 15 minutes.
3. Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add beef and onion and cook, breaking up the beef with a wooden spoon, until the beef is browned and the onion is softened, 10 to 12 minutes. Stir in Worcestershire, garlic powder and 1/4 teaspoon salt. Set aside.
4. Whisk milk and cornstarch in a large saucepan. Bring to a boil over medium-high heat, whisking often, until bubbling and thickened enough to coat the back of a spoon, 6 to 8 minutes total. Remove from the heat and stir in Cheddar, 3/4 teaspoon salt and turmeric until the cheese is melted.
5. Spread the beef mixture in a 9-by-13-inch (or similar 3-quart) baking dish. Top with the broccoli and pour the cheese sauce evenly over the top.
6. Combine potatoes, egg, pepper and the remaining 1/4 teaspoon salt in a medium bowl. Sprinkle evenly over the casserole. Coat the top with cooking spray.
7. Bake the casserole until it is bubbling and the potatoes are beginning to brown, about 40 minutes. Sprinkle with paprika. Let stand for 10 minutes before serving.

Ingredient Note: Precooked shredded potatoes can be found in the dairy section of most supermarkets or near other fresh prepared vegetables in the refrigerated produce section. To make your own, halve 1 pound unpeeled baking potatoes; cook in lightly salted boiling water until slightly tender but still firm in the center, 7 to 10 minutes. Let cool on a clean cutting board. Shred using the large holes of a box grater.

The World Premiere of When Saints Go Machine’s New Video

http://video.nytimes.com/video/2011/08/29/t-magazine/100000001023934/music-video--kelly.html

Historically, the D.J. culture of Germany has dominated its little neighbor Denmark, but that’s all changing. Pioneering a new and distinctive Copenhagen sound is the band When Saints Go Machine, whose hypnotic electro-pop is held together by the lead singer Nikolaj Manuel Vonsild’s soaring falsetto vocals, which have earned him comparisons to Arthur Russell and Antony Hegarty. As the band prepares to embark on a big tour of Britain, Vonsild talked to The Moment about the new video for the hit single “Kelly” off their latest album, “Konkylie.”
